Rojo debuts on Brilliant Lady

On board Virgin Voyages’ newest ship, Brilliant Lady, the debut of Rojo by Razzle Dazzle is turning heads (and taste buds) with a menu that celebrates bold Spanish flavors and refined, elevated dining. We were onboard for the Mermaiden voyage for the lady ship out of New York City and had dinner in Rojo on Night One after our spectacular sail away past lady liberty.

The evening begins the way every great meal should: with warm bread, golden on the outside and pillowy inside, served with olive oil. A perfect prelude to a Luna Rosa cocktail — a refreshing blend of vodka, lillet blanc, tomato & laurel infusion, lemon, and tonic water. For those skipping the spirits, the Besito mocktail is a revelation in its own right, sparkling with hibiscus, jasmine tea, and peach.

From there, the table transforms into a vibrant tapestry of tapas. Think silky slices of jamón ibérico paired with marcona almonds, crisp jamón croquettes with roasted garlic aioli, and a playful beef tartare crowned with a golden yolk and served alongside potato chips. Highlights like ox-tail montadito — caramelized onion and Mahón cheese layered on crostini — and smoky patatas bravas prove that sharing plates are where Rojo truly shines.

When it comes to mains, the spotlight belongs to the Chuletón a la parrilla: a perfectly grilled ribeye dressed in chorizo piperade and charred shallots. It’s indulgent, robust, and might just claim the crown for best steak on board (Sorry Pink Agave). For those seeking comfort with a twist, the Arroz con pitu de caleya delivers comfort food with a nice lightness.

Of course, no meal is complete without something sweet. The Basque cheesecake, delicately paired with quince membrillo, strikes the perfect balance between creamy richness and light elegance. Meanwhile, the arroz con leche, infused with coconut and cinnamon, brings a touch of nostalgia, reimagined with a modern flair.

Every detail at Rojo feels intentional — from the interplay of flavors to the stylish presentation — creating a dining experience that is equal parts sophisticated and soulful. It’s more than just a meal; it’s a culinary voyage, one plate at a time.
